Ingredients
Base
- 120g butter
- 1 tspn vanilla
- 1/4 tspn baking powder
- 1/2 cup sugar
- 1 cup pl flour
- 1 cup coconut
Filling
- 60g butter
- 1 can condensed milk
- 2 tblspn golden syrup
Topping
- 1 cup coconut
- 60g butter
- 1/2 cup rolled oats
- 1 tbslpn golden syrup
Base
- Cream butter sugar and vanilla until creamy.
- Add sifted flour and add coconut.
- Press into 7x11” tin.
- Bake in moderate oven for 20 minutes
Filling
- Stir all ingredients in saucepan over low heat and watch until butter melts into condensed milk and syrup.
- Let simmer a few minutes until golden brown, stirring constantly to avoid burning.
- Spread over cool base while mixture is hot.
Topping
- Combine coconut and rolled oats and add to dry ingredients, mix well.
- Sprinkle over the base and bake in a moderate oven until golden.
- When cold cut into fingers.
