Ingredients
- 1 cup SR flour
- 1/2 cup brown sugar
- 3/4 cup chopped dried apricots
- 125g butter
- 2 cups quick cook oats
- 1/2 cup coconut
- 1 tspn cinnamon
- 2 tblspn honey
Method
- Line a lamington tin wth baking paper and grease.
- Preheat oven to 180C.
- Mix dry ingredients together.
- Melt butter and honey over gentle heat.
- Mix in to other ingredients and press into tin.
- Cook in moderate oven for 20-25 minutes.
- Cut while warm.
