Mosaic Almond Sweet Cookies
Ingredients
- 3/4 cup butter
- 1/4 tsp salt
- 1/2 tsp almond extract
- 2 tsp grated orange rind
- 3/4 cup sliced almonds
- 3/4 cup sugar
- 1 egg separated
- 1 1/2 cups flour
- 2 tblsp honey
Method
- Preheat oven to 180C.
- Beat butter and sugar until light.
- Beat in salt, egg yolk, almond extract and orange rind.
- Add flour and mix until just combined.
- Press over the bottom of a lined 23x33cm baking pan.
- Beat the egg white until frothy and brush over the dough.
- Sprinkle the almonds over all and bake for 30 minutes.
- Brush with 2 tbsp of honey and bake for 15 minutes more.
- Cool slghtly and cut into squares.
Makes 32 bars.
