Rice Bubble Crisps
Ingredients
- 125g margarine
- 1 cup sugar
- 1 cup plain flour
- 1 egg
- 1 tsp vanilla essence
- 1/2 cup desiccated coconut
- 1/2 cup sultanas or mixed fruit
- 2 cups rice bubbles.
Method
- In a large bowl, beat margarine, sugar and vanilla until light and creamy.
- Add egg and beat well.
- Stir in flour, coconut and fruit, mix well.
- Using a teaspoon drop balls of the mix into rice bubbles and coat well.
- Place on a lightly greased baking tray and flatten slightly.
- Bake at 160C for 10-15 minutes, or until brown.
