Lemon Coconut Muffins

INGREDIENTS

  • 2 Cups SR Flour
  • t tspn cinnamon
  • 1 cup coconut
  • 1 egg
  • 3/4 cup sugar
  • 1 tspn vanillin sugar
  • 90g melted butter
  • 1 cup milk
  • 12 tspns lemon butter

METHOD

  • Grease 12 hole muffin pan
  • Sift flour, sugar, cinnamon and vanillin sugar and add remaining ingredients.
  • Pour half the mixture into 12 muffin holes
  • Add 1 tspn of lemon butter into each muffin, then top with remaining mixture.
  • Bake at 200C for 15-20 minutes
  • Cool before removing from pan.
