Mosaic Almond Sweet Cookies

Ingredients

  • 3/4 cup butter
  • 1/4 tsp salt
  • 1/2 tsp almond extract
  • 2 tsp grated orange rind
  • 3/4 cup sliced almonds
  • 3/4 cup sugar
  • 1 egg separated
  • 1 1/2 cups flour
  • 2 tblsp honey

Method

  • Preheat oven to 180C.
  • Beat butter and sugar until light.
  • Beat in salt, egg yolk, almond extract and orange rind.
  • Add flour and mix until just combined.
  • Press over the bottom of a lined 23x33cm baking pan.
  • Beat the egg white until frothy and brush over the dough.
  • Sprinkle the almonds over all and bake for 30 minutes.
  • Brush with 2 tbsp of honey and bake for 15 minutes more.
  • Cool slghtly and cut into squares.

Makes 32 bars.
